Monettes serves a new menu each day that highlights
local island ingredients by pairing them with imported delicacies
from around the world, ensuring that every experience will be unique.
The sophisticated American-French cuisine served at Monettes is
complimented by an award winning wine list featuring over 1,000
labels of specially selected bottles. With full ocean views of
the pristine Kauna’oa Bay at the prestigious Mauna Kea Beach Hotel,
Monettes is the epitome of paradise.
The restaurant is the creation of brothers Scott
and Mark Monette, who are also owners of the world-renowned Flagstaff
House Restaurant located in Boulder, Colorado. Monettes takes pride
in showcasing the same caliber of gourmet cuisine and exemplary
service the Flagstaff House Restaurant has become known for over
the last 38 years.
Michael Minshull, Chef de Cuisine
Chef Michael Minshull brings 17 years of culinary and hotel restaurant management experience to Monettes Artisan Fish and Steak, including work with several Mobile Four-Star properties and recipients of Wine Spectator “best awards of excellence”. Most recently, Chef Minshull served as Chef and Sommelier at the Hotel Grand Pacific in Victoria, British Columbia. Prior to that, he was Executive Chef at Dock 503 Waterfront Dining in Sidney, B.C. In June 2009, Chef earned his Sommelier Diploma from the International Sommelier Guild in Victoria, B.C.
Mark Monette, Executive Chef/Proprietor
Chef Monette has been the Executive Chef of the Flagstaff House Restaurant
in Boulder, CO since 1985, and he essentially grew up in the restaurant industry
under the guidance of his father, Don Monette (founder of Flagstaff House Restaurant).
He is passionate about food and has worked in multiple Four-Star restaurants
in New York, France and Asia where he learned from culinary masters including
Thomas Keller and Bernard Hermman. As the Executive Chef of the Flagstaff House
Restaurant he earned many accolades including the Wine Spector Grand
Award and the Mobile Four-Star Award; he has been featured in many well-known
publications such as the New York Times, Bon Appétit, USA
Today and Nation’s Restaurant News.
He was also featured on Food Network’s Road Tasted. |
